Gelato Fiasco: Torched Marshmallow S'more Gelato, 16 Oz

A campfire classic: A cinnamon graham cracker gelato accented with chunks of chocolate and homemade toasted marshmallows. Foraging a massive pile of fallen branches and twigs for your kindling; charming Dad to help build an expertly engineered log structure (and secretly wondering if, a few decades from now, you’ll somehow be able to achieve this same level of mastery when your own children ask for the same help, perhaps on this very same campsite); convincing your cousin to share her perfect roasting spot that provides just enough flame. For kids camping on the shores of Somes Sound, s’more-making is serious business. When we created our recipe for Torched Marshmallow S’More Gelato, we decided that it must meet the standards of our 13-year-old selves who ruled the campfires of the kingdom known as Mount Desert Island. The flavor begins with a base of finely ground all-natural cinnamon graham crackers — the same ones we use today when we go to Acadia. We unwrap chocolate bars and break pieces of those milky squares into the gelato. Finally, we take our own marshmallows (which we make ourselves; perhaps we’re now more refined with age), torch them one-at-a-time to perfect crispy on-the-outside, gooey-on-the-inside doneness by using a not-too-small, not-too-big flame, and squish them in to our frozen masterpiece. The result is sweet, sweet delight that will leave you satisfied as you dream away under the brightest of stars and the final wisps of the campfire dance off into the night.
